Is it even a roast dinner if potatoes aren’t involved? ?
Sometimes I love a roast with ALL the trimmings, other times just a couple of carefully selected sides will hit the spot. Like a riff on boulangère potatoes (kinda like dauphinois, but a little lighter), and homegrown greens from mother’s garden – served with one of my faves: slow roast pork belly with crispy cracking and a juicy, melting middle.
I ran out of time today, so sharing an older pic – but I’m eating this exact meal tonight and once again, it’s totally hit that Sunday roast spot. Let me know if you want my recipe for those spuds (it’s all the way back in 2019) but I’ll happily share it again real soon ?
