In 2017 I had one of the best pizzas in my life ?
We were wandering the streets of Chicago – Lincoln Park neighbourhood to be precise – and stopped off at a place we stumbled on down a side road (I can’t quite remember the name); it wasn’t all about pizza, but they had pizza on the menu so we went in, craving a slice. This is where we discovered the white base pizza of dreams. I’d never had one before, and now I can’t stop recreating – like last night (with leftovers tonight!). And this pizza of dreams wasn’t even a deep dish.
From that memory, we always make this one the same: on top of a silky smooth béchamel-esque base sits roasted butternut squash – literally squashed into it – alongside a scattering of maple-candied bacon and fiery red chilli. This time I added a pinch of rosemary and a side of ‘pizza’ sauce (one of my besties in Columbus, Ohio always orders with a side of extra pizza sauce, and now I do that too). It’s up there for me, the taste… the nostalgia… please can I travel again soon?!
