Herby Red Rice & Giant Couscous Bowl with Za’atar, Hummus & Pitta ?

I’ve realised that I’m rubbish at sharing my ‘work from home’ lunches actually on the grid, so mixing things up today with this delicious bowl:

? Giant couscous and red rice (camargue) salad, cooked as per instructions then dressed together with:

Juice from 1/2 lemon
Big glug EVOO
Handful pumpkin seeds
Handful raisins
Big handful chopped coriander
Sea salt
Black pepper

? Toasted pitta rubbed with za’atar (the blend I like to use is red; it’s heavy on the sumac)
? Home-made hummus topped with more za’atar and some sesame seeds
? Emmental cheese and sun-soaked tomatoes (seriously I think I need to be an ambassador for these items already ?)

This was super light, packed full of flavour and goodness – plus it’s totally easy to adapt to your tastes/what you’ve got in the fridge!
