Herby, garlic butter stuffed Chicken ?
I’ve actually been thinking about making this dish for about 3 weeks, but wanted to make sure we’d used up all the Christmas stuff before I bought any more meat. I decided to section up a whole chicken for this for two main reasons: I wanted two EVEN sized breasts and it’s more economical as the whole bird can be used to make a few different meals, plus a nice stock!
You can see how I put this dish together over on my stories (I’ll save them to my highlights too). Whilst this didn’t quite have the absolute flood of herby, garlic butter I was hoping for when I cut into it, it was flippin’ delish nonetheless and everything I was hoping for (I think a lot of the butter got sucked into the chicken as it cooked). Not a bad start to 2021 ?
