Grilled chicken, Calabrese style ?
OK so this is a total of something I once tried at love_prezzo a few years back. It’s a super easy, homemade version that hits that restaurant-vibe spot any day of the week. I ate mine with baked fries on the side (you know I make those super spesh once with panko right? …No? Recipe in highlights for those).
My version (for two) is basically 3 mini mixed peppers (just not the green ones for me thanks!), 2 small red onions and a couple of mixed fresh chilli (as hot as you want to go) sliced and fried until almost starting to char. Then I pour in a tin of really good tinned tomatoes (plus a 1/4 can of water) and grate in a fat garlic bulb. To season, I add a good pinch of sea salt, lots of black pepper and a good tsp of dried oregano (taste as you go and make it how you like); I let mine bubble down for 5mins or so, until thick and luscious.
Whilst that’s doing its thing, I bash a couple of chicken breasts so they’re thin and even, then griddle until nicely marked and cooked through. Done. But don’t forget the fries! ?
