Hey foodies! I’ve been recipe testing a super delicious apple streusel cake using pantry staple, and WOW is it delicious (I’ve now made 3 of them and they don’t hang around long)! I’m pretty sure Lyle’s Golden Syrup is found in every good UK kitchen cupboard (I mean LylesGoldenSyrup have making it to the same golden recipe since 1883! Classically in tin form, but now Lyle’s has a launched a new 700g bottle making it super easy to get creative in the kitchen; What’s your joy of baking? Mine’s sharing a slice of this goodness with the fam, here’s the recipe in case you fancy doing the same!
For the apples:
x2 medium apples chopped into small cubes (I used gala)
juice from 1/2 lemon
1.5 tbsp Lyle’s golden syrup
pinch sea salt
20ml water

For the streusel topping:
60g plain flour
45g demorara sugar
30g chopped hazelnuts, roasted
45g cold salted butter, cubed
1 tsp sweet cinnamon

For the cake:
60g Lyle’s golden syrup
100g golden caster sugar
160g cooking butter
1 tsp vanilla extract
280g plain flour
1 tsp baking powder
2 large eggs
1 – start by adding all ingredients for the apples to a pan and soften over heat for 8-10 mins. Drain and reserve any leftover liquid and set apples aside to cool.

2 – preheat the oven to gas mark 5 (200C) then prepare the streusel topping by rubbing all ingredients together (ideally with cold hands!) to form fine breadcrumbs. Set aside.

3 – move on to the cake mix. Using a stand mixer (or your muscles!), cream together Lyle’s golden syrup, butter, sugar and vanilla extract until pale. Whisk in the the eggs and flour; mix to incorporate air until light and fluffy. Gently fold in cooled apples.

4 – line a cake tin with baking paper (I used a 26cm springform) and spoon in the cake mix. Generously pour over the streusel topping and place in the oven, middle shelf. This cake should take between 35-45mins to cook, depending on how thick your streusel topping is. Check from 30 mins until a tooth pick comes out clean. Cool and serve with a drizzle of Lyle’s golden syrup or your reserved apple liquid.
