Double Cheese and Red Onion Veggie Hand Pies ?

I’m a big fan of these flavours, and I mostly always opt for a veggie pasty when we buy them from the bakery (I heart cheese), so when Matt made a batch over the weekend I just had to share this flavour combo. No recipe as such as it was a bit of a ‘use-whatever-you-can-find-in-the-fridge’ type of thing, in a bid to use up half a pack of open puff pastry. These little hand pies were thrown together with the leftovers today, they had the double egg wash treatment and took about 20mins in the oven (gas 6/200c).

The filling: a mix of grated vintage Cheddar and aged Red Leister, plus a couple of small red onions and a small handful of apache potatoes (both finely diced), plus the tops of a little (past its best) tenderstem broccoli. This was all tossed together in a bowl with about 1tbsp cornflour, sea salt, black pepper, 1/2tsp Dijon mustard and a splash of Worcestershire sauce. Delish! ?
