Cumin and Black Pepper Kofta/Köfte Style Meatballs ?
These delicious little balls are super juicy and full of flavour – and they are perfect to stuff into some pittas alongside some fresh salads. Which is exactly what I did tonight after a lovely long walk in the sunshine. I made these in no time at all, here’s my recipe for .approx 12 medium-ish meatballs:
250g Minced beef (or lamb, or a mix)
1tsp Black pepper (freshly ground)
1.5tsp Cumin (freshly ground)
1/2tsp Sea salt
1 fat Garlic clove (grated)
3tbsp Panko breadcrumbs
A small bunch of coriander (roughly chopped)
– mix the above really well. Form into smallish balls (if you find it’s too wet, just sprinkle in a little more panko) and pop into a cast iron pan along with:
8-10 cherry tomatoes (quartered)
75ml water
1tbsp olive oil
– turn the oven onto gas 6/200c. Meanwhile cook the meatballs uncovered for a couple mins then pop on a lid for 5mins to steam through.
– remove the lid and pop into the oven for 15mins.
– remove from the oven and serve with:
Thin slices of red onion
A squeeze of lemon
A sprinkle of fresh coriander
Drizzle of olive oil
P.S: if you want ‘drier balls’ simply pop the pan back on the hob for a couple mins after taking out the oven – use high heat to boil off any excess liquid.
