| CREAMY TURKEY MELT TOASTIE WITH RED PEPPER PESTO:
….because sometimes you just need some quick and delicious HAND FOOD! This creamy turkey MELT toastie was made with crème fraîche mixed with up with some roasted red pepper pesto, fresh basil leaves, spring onions and cracked black pepper. I stirred this through roasted turkey chunks (chicken would work perfectly too) then generously pilled everything onto some rustic focaccia bread alongside ripped mozzarella slices. I actually toasted this in my new Lékué Microwave Grill (thanks LakelandUK!) – yes MICROWAVE – and seriously I can’t believe how well this worked… creamy pesto turkey sandwiched between crisp and crunchy bread with hot gooey cheese in 3 minutes ? so good! (and super easy to clean too!); I can’t wait to see what else this versatile grill can do!
