COLCANNON STUFFED MUSHROOMS:
Throwing it back to these colcannon stuffed mushrooms tonight as a little nod to my Irish friends for Saint Patrick’s Day! …Although we’re not able to gather, and many festivities were cancelled, perhaps we can enjoy a little light feasting at home. These were stuffed with buttery mashed potatoes mixed with lightly steamed kale, lots of black pepper and finely chopped scallions (spring onions); all topped off with strong cheddar cheese and crispy panko breadcrumbs drizzled in olive oil ?
