Perfect for lunch, dinner, whenever. This silky little number uses such a humble mix of ingredients – and it’s ready in as long as it takes to cook the pasta (there’s a how-to in my highlights a little way back for this one already!). But I can’t help but make my own little tweaks to these ‘traditional’ dishes, I guess that’s the beauty of cooking; here a couple of finely sliced baby yellow courgettes made their way into the dish for a little extra vibrancy.
Today was one of my WFH days, I always seem to be more productive from home (anyone else?) and I actually take a break, which is when I spotted the courgettes in the garden and immediately wanted to eat them.
