BUTTER ROAST CHICKEN WITH LEMON + OREGANO:
Sorry folks I realise it’s Monday and this is not meat free, but I just had to share yesterday’s take on roast dinner because it was delicious; I roasted a whole chicken with butter, fresh oregano and lemon slices stuffed UNDER the skin (juicy and flavoursome). Then I divided it up for different meals; the tender breast features here sat on top of a buttery and rustic celeriac mash inspired by crunchnutrition. I also made a gorgeously creamy leek gratin with roasted hazelnut crust (that might have to get its own post soon, it was so good) and a charred hispi cabbage ‘rose’. Where are the potatoes? We went ‘low carb’ due to eating all the potatoes in that homity pie galette I made on my stories! ?
