BUSY DAY BAKED CHICKEN WITH ROSE HARISSA:
My work schedule is insane at the moment, but exciting; something very big is launching for one of my client’s in the beauty world soon, and I can’t wait to see everyone’s hard work out in the world! That said, I’ve had very little time for myself, or proper cooking…except on weekends. So easy, hands-off meals during the week have been the way to go for me. This is a rather yummy traybake, no recipe needed really – just a jar of some good quality rose harissa paste or pesto. I use belazu_co (not sponsored or gifted, I just love it!) for it’s depth of flavour, sweet smokiness and a slow-burning chilli heat. I scored the skin, then generously rubbed 6 chicken thighs with the rose harissa paste, then divided them between two oven trays along with: half a chopped chorizo ring, rough chunks of 2 red onions and 1 aubergine, a handful of halved cherry tomatoes, 1 sliced pointy red pepper, 1 halved garlic bulb and half a bag of baby potatoes. I drizzled over some olive oil and fresh rosemary then whacked the trays into the oven for about 45mins – until the chicken is crispy and the veggies sticky. Served with a simple watercress salad and buttered crusty bread ?
