BIRTHDAY CELEBRATIONS + TARTA DE SANTIAGO:
You may have seen from my stories that it was a big birthday for my mum this weekend, so we’ve spent it doing fun things and eating yummy food! ?This is the cake I made for her… a take on the Spanish Tarta de Santiago; a simple and delicious cake – made without any fat or flour! The recipe was shared with me by a lovely women called Susan who lives in Belgium, here it is:

TARTA DE SANTIAGO:
250g caster sugar
250g ground almonds
1 tsp cinnamon
Zest of 1 lemon (orange also works well)
5 medium eggs
2 tbsp icing sugar, for the topping

METHOD
1 – heat oven to 160C/325F/gas mark 3, then grease and line a 22cm loose-bottomed cake tin
2 – lightly beat eggs in a large bowl, then add the sugar, almonds, cinnamon and lemon zest and mix until everything is thoroughly combined
3 – pour the mixture into the cake tin and bake for 40-50 minutes, until the top is golden. Leave to cool before taking out of the tin
4 – if you’d like to decorate it traditionally, cut out a template of a St James cross and lay it on top of the cake. Sieve the icing sugar over the template and remove carefully to reveal the shape of the cross… I am lazy so the whole thing got covered in icing sugar! ?
