BAKED ORZO WITH SAUCY CHERRY TOMS + ‘NDUJA:
Now THIS is what I call a cosy bowl! After slow-roasting some red onions, cherry tomatoes and an orange pepper for maybe half an hour, I turned my attention to the orzo pasta… This was started on the hob with a little olive oil and minced garlic to coat, before I stirred in about 250ml of water and this Whole Cherry Tomato pasta sauce with spicy Italian ‘Nduja sausage – gifted from sacla_uk as part of their new line up of sauces (available from sainsburys RRP £2.30). This one’s got a lovely warming flavour and I was impressed to see a handful of ripe, whole cherry tomatoes in there too! Once mixed through the orzo, I added my roasted veggies and popped it in the oven for around 10mins to bake through. To serve, I mixed in a big handful of parmesan and a little fresh basil. Super easy, super delicious! Happy start to the week foodies ?
